I thought tea belonged in a cup. Then I found a night market in Chiang Mai serving a salad made from fermented tea leaves. The dish is called laphet thoke and comes from Myanmar, where fermented tea leaves have been eaten for centuries and traditionally shared with guests as a sign of hospitality. Next to it was banana flower salad a dish popular across Southeast Asia. The banana blossom is sliced into thin strips and mixed with herbs, lime, chili and peanuts, giving it a crunchy texture somewhere between cabbage and artichoke. Salty, bitter, sour, crunchy, floral nothing tasted the way I expected. This is what I love about night markets in Asia. Not the “top 10 foods”. The feeling that there are still things in the world you’ve never even imagined eating. 📍I’ve been collecting places like this all over Chiang Mai. The guide is almost ready follow if you want the first drop.
