Presenting my haphazard boat cookery creation: Gochujang Ginger Garlic Chicken Pineapple Soup! That's a mouthful so I dub thee '3-G Chicken Pineapple Soup'!! Mind you I am no professional chef. Most of the time I just play around with my food stuffs! I rarely measure anything when I cook so the ingredient quantities listed are approximations. However, I do watch the clock like a hawk so mind your timers! Take special care not to overcook stuff. The flavor of garlic changes dramatically over the course of various cooking times. So anywayzzz, here's the best recipe I can come up with: Pour enough canola oil in your pot to evenly coat the bottom. Bring up to temperature before adding in the the ginger, garlic, salt, and pepper. A useful not: A wee bit of garlic thrown into the pot to check the heat should sizzle when it hits the oil but the oil shouldn't be so hot that it smokes. I love garlic and ginger so I am definitely heavy handed with them in this soup! Sauté on high heat until the garlic goes aromatic, add in gochujang and briefly continue to sauté. Pour in two thirds of chicken stock, bring to a boil. Add in the pineapple, pineapple juice, and lemon juice and reduce to a simmer for five minutes. Mind the clock at this point. Cooking too long will change the garlic to an earthy flavor and the pineapple/lemon juices will begin to lose their sweet tanginess. (My apologies for not including this step in the video, I forgot to hit record! ) Pour contents of pot into a bowl and set aside. Add remaining chicken stock and water into the same pot you have been using, bring the liquid to a gentle simmer and steep the kombu in the liquid for 15 minutes. Basically you are making a sea weed tea so don't let it boil. Remove the kombu and add in the pre cooked chicken. Simmer till chicken is warmed through. Pour the two stocks together, add a splash of white vinegar and you are ready to eat! I didn't use any garnishes because I simply didn't have any on the boat at the time! But, I can tell you I would have loved to garnish it with some fresh basil or green onions if I had them on hand! Even without the garnish, this soup was DELICIOUS! Ingredients listed below: 1 pound of previously cooked chicken ( I prefer chicken thighs, more savory! ) chopped 3/4 cup thinly sliced pineapple 2 oz fresh from the pineapple Juice of one lemon 3 tablespoons gochujang 2 fingers of julienned Ginger- fresh 1/2 a bulb worth of rough chopped garlic fresh 1 sheet kombu (dried kelp) Canola oil- enough to coat the bottom of the pot 3 cups chicken stock 1 cup water 1 teaspoon salt 1 teaspoon black pepper Splash of white vinegar to taste ( I like one teaspoon worth )

Baby sea turtle eating on the edge of my marina dock. The little turtle literally let me within inches of him to film. So cool!

Put up some nice shade to help keep muh boat cool. LeeLoo is enjoying topside much more now that things are a bit cooler thanks to a little bit of pvc, crab line, and a tarp!

Sailing north from Marathon Key, Florida. This will mark our first time sailing outside on the open ocean. We originally intended to make it all the way up to Jacksonville FL in one shot but fatigue, a dying wind, and subsequent engine trouble resulting from spooling up some fishing net on the prop forced us in earlier than planned at Fort Pierce. Sharks, parrot fish, tarpon, and mullet. Just a few of the sea critters I get to see every day in my boat backyard. The shark in this clip is a nurse shark. Living on the ocean affords you some pretty cool scenery. #shorts

Making a guardrail to protect my little boat dog LeeLoo from falling off the boat. Safety first for sailing life with a french bullddog on board. PVC and lashing. Doubles as an anchor board for lashing down our jerrycans of gas and diesel while under way.

Riced cauliflower tacos are what's for dinner tonight aboard SV SweetPea this taco Tuesday. Off grid living aboard a boat is tasty. Cauliflower is supposed to be extremely healthy being a cruciferous vegetable with added benefits for guys. Apparently it is supposed to help scrub out excess estrogen in males. All I know for sure is that these tacos turned out tasty.

#shorts So we had lucky dolphins bow ride our sailboat on our first official day under full sail without an instructor or other experienced sailor to aid us. Just me and dad running the boat, riding the wind. Off grid living when aboard a boat is truly unique. Can't see these kind of things in an RV!

See how to cook breakfast tacos aboard a boat! Everything is better aboard a boat. Who doesn't love bacon? Seriously though, if you don't like bacon: leave a comment below cuz I want to know! I'll try cooking whatever alternative to bacon that tickles your fancy! Just because you are thinking about living off grid aboard a boat doesn't mean you have to settle for bologna sandwiches and wolf brand chili (that could be rough). Even with a small galley with nothing but a two burner propane camping stove, you can still whip up delicious meals aboard your floating home. Like what you see? Then be sure to subscribe and grab a Tee. SweetPeas Boat Tees has salty swag suitable for your inner swashbuckler: https://teespring.com/stores/sweetpeas-boat-tees Need a camp stove? Here you go: Coleman two burner portable propane stove. It's the new model of the one I use myself. https://amzn.to/3pOHhXZ

#shorts Off grid living requires attention to detail. If a towing line breaks it could mean losing a very valuable piece of equipment for those living aboard a boat. Knowing a few basic knots turned a potential headache into a minor fix. Also, setting up a redundant system saved me from having to buy a new dinghy! My advice is ALWAYS have backup lines if you tow your dinghy. Also, I should have put in abrasion guards of some sort but I didn't! Off grid living requires planning ahead. This was a clear example of just how important that is.

#shorts Foraging doesn't have to be hard. Sargassum sea weed literally floats by my home on the ocean. Off grid living can be QUITE interesting if you know what to look for. One of the most enjoyable things for me personally living aboard a boat is the self reliant nature of things. Tasty and unique delicacy are everywhere! Admittedly I haven't yet tried sargassum, but I do plan on it. I'd like to do a catch and cook combo video when the opportunity arises!

First time in the Atlantic!! We have a furler problem we need to fix so we are heading out around marathon key. Off grid living comes with it's unique set of problem that need fixing. Especially when off grid means living on a boat. We were anchored on the gulf side and the boat yard is on the Atlantic side so away we go! Two hour cruise around the island to get to a spot that would take ten minutes to walk to lol! Quit a large change of pace from life on land to living on a boat! Thankfully we are no longer in a rush to do much of anything these days, so a little day cruise is under way! Sadly the sails stay down for this one. Next time though.

Catch and cook Barracuda and snapper aboard a 36' sailboat. Is Barracuda toxic? Lets taste test it! A look inside what life is like out on the waters of the Florida Keys and how I go about cooking on a boat. Just because it's a tiny house on the water doesn't mean you have to relegate yourself to bologna sandwiches! Delicious food is waiting right outside, so its time to hook and cook it! Anchored on the Gulf side of Marathon, Florida were we can catch dinner literally within a couple hundred yards of the boat. Beats farm to table by a long shot. Catch and cook is the way to go! $30 a plate seafood dinner pulled right out of the water, it doesn't get any more fresh than this! I know a lot of Americans consider barracuda to be a trash fish thanks to ciguatera toxicity, but that's just 'cause they don't know the whole story. Barracuda is delicious! I would even say better than the snapper we had cooked up side by side! Firm flesh, no fishy taste or odor, pure tasty fillets. No problems with barracuda so long as you harvest the smaller ones. Ciguatera can be in the older, larger fish since the toxin accumulates of the life of the fish, biomass accumulation or some such technical thing. If you haven't tried it yet, I strongly suggest you do (15-20" are the best, personally!)
