We've had the benefit of cooking our own pasture raised chops for over 3 years now and think we have perfected the method of how to get crispy crackling with juicy, tender and succulent meat. However, it got us wondering... do our methods stack up with the commercial pork chop products available to the average consumer? In this video I show you how we cook our pork chops here at the Ramshackle Ranch and we also test these methods on local commercial pasture raised pork and barn raised pork. Here are the cooking times and internal temperatures for cooking your pork chops to perfection. We like our pork chops medium to medium rare so we aim for an internal temperature of 63°C (145°F) in thickest part of the chop before consuming. For very thick chops (more than an inch and a half thick) from an older animal after searing the skin for 4 minutes I sear on each side for about 6 minutes at high heat until the thickest part of the chop is at least 45°C (113°F). I then place in an oven between 160°C (320°F) and 180°C (356°F) until the internal temperature reaches 55°C (131°F) to 60°C (140°F) this usually take 20 minutes. I then pull out of the oven to rest for 5 minutes and crank the broiler/grill to bring up the bubbly crackling which usually takes around 5 minutes under the grill. For chops under an inch and a half thick after searing the skin for a couple of minutes I sear on each side for about 4 minutes until the thickest part of the chop is between 50°C (122°F) and 55°C (131°F). I then leave to rest for 5 minutes before placing under a hot broiler/grill to bring up the crackling. This rest time and the cooking under the grill/broiler usually brings the internal temperature of a slimmer chop up to 63°C (145°F). #porkchops #cookinghacks #pork Support us and gain early access to videos and other exclusive rewards. Slow Living on the Farm. How we make homemade feta cheese, chevre, yoghurt, ricotta and kefir from our dairy goats. Join Pascale this week as she milks her goats and shares 5 delicious fermented goat milk products they make on the homestead. Quick and easy to make these recipes are great additions to your repertoire if you’re a dairy goat owner or thinking of keeping a dairy goat in the future. She covers how she makes a basic feta, chevre, yoghurt, ricotta and kefir out of her fresh raw goat’s milk. #dairygoats #homemade #goatmilk #homesteading Chapters 00:00 Introduction 02:06 Feta and yoghurt 09:07 Ricotta 10:25 Yoghurt (continued) 12:13 Chevre 19:02 Kefir 22:26 Feta (continued) Goat milk recipes Feta and ricotta As discussed in the video I use the recipes from Molly Nolte’s Fias Co farm website. Feta: https://fiascofarm.com/dairy/feta.html Ricotta: https://fiascofarm.com/dairy/ricotta.html Yoghurt Ingredients 1 – 5L Raw goat/cow milk ½ teaspoon DVI yoghurt cultures or ¼ cup live active yoghurt (you’ll need more if you have a larger quantity of milk) You can do this recipe with any amount of milk. You just need a way to maintain your cultured milk as close to 40°C to 45°C (104°F – 113°F) for a period of at least 10 hours. Heat your milk to simmering roughly 90°C (194°F) and leave for 5 to 10 minutes like this stirring occasionally to prevent the milk burning on the bottom. Turn off heat and allow to cool to 45°C. You can speed this process up by vigorously stirring your saucepan of hot milk in a cold water bath in the sink. Once the milk has cooled to 45°C add your cultures or live yoghurt and stir through well for 20 or so seconds with a sterilised spoon. Place somewhere very still to keep temperature for 10 to 12 hours. I use our dehydrator set at 45°C. Once finished incubating place the yogurt pot in the fridge for 24 hours to cool and further set. You can then put into jars for eating, or like we do, you can strain it over cheesecloth for a further 12 hours to remove most of the whey. This will give you a rich, thick and creamy yoghurt. Chevre Ingredients 2L (1/2 gallon) warm raw filtered goat’s milk (22°C – 30°C or 72°F – 86F) 1/8 teaspoon (or a sprinkle) of Chevre cheese cultures ½ drop Rennet diluted in water. I measure 8 tablespoons of water in a jar and then add 4 drops of rennet. Place the cultures and diluted rennet into the warm milk and stir well for 20 seconds to incorporate. Leave in a warm place to incubate for anywhere between 12 and 48 hours. When ready, strain the curds through cheesecloth overnight. Turn out into a bowl and stir through salt to taste. At this stage your chevre is ready as is but you can season or marinate it however you like for additional flavours. For example you can toll it into logs and coat with ash, dill or chives or you can place it in a jar with herbs such as thyme, gallic and peppercorns. Kefir (with DVI cultures) Ingredients 1L (1/4 gallon) bottle of warm goat milk 1/8 teaspoon DVI kefir cultures Using a sterilised spoon stir through your cultures into the milk in the bottle. Leave with the lid off with a piece of cheese cloth over the top to breathe in a warm room around 22°C for 24 hours or longer. Once soured and thickened to your liking put the lid on the bottle and store in the fridge until ready to drink. Support us and gain early access to videos and other exclusive rewards. It’s been a while since our last boat update, thanks to our side business keeping us flat out. (We discussed that in the last episode) Our apologies, but we hope you understand. In this video, the frames are finally all in place, and we’ve just installed the chine stringer and the first of many hull stringers—big steps toward bringing this John Welsford 'Pathfinder' design to life. There's some handy techniques for transferring lengths and angles from the project to wood for spot-on cuts, I share my thoughts on the upside to laminating the stringers and a few challenges we wrestled with this time around. Want to share a favourite trick for precision in a project like this? Drop us a line in the comments—we’d love to hear from you! After two months away, we're back in the workshop and making progress on the Pathfinder build! In this episode, we bring you up to speed on what's been happening, why the leave of absence and dive into the next big step—milling stringers from a beautiful slab of native timber. Our wedding was a weekend long DIY affair at a small historical West Australian timber town that has now been converted into a holiday village. Most guests stayed at the village and came together to contribute something towards our weekend. This is a recollection of the 3 months of planning for our wedding and an insight into some of the preparation and celebrations on the day. #diywedding #weddinginspiration #wedding The List 00:00 The Date, Accomodation and Reception Venue 02:02 Homemade Cider 03:13 Ceremony Venue 03:54 A Celebration of the Pig 05:33 Lamb Al Asador 07:06 Potatoes Dauphinoise, Canapés and Staff 07:44 Flowers 09:18 Makeup, Hair and Dress 09:41 A minor crisis (Let's not let this ham-per our efforts) 14:43 Charcuterie boards and Crockery 15:27 Prosciutto and Salami 16:46 Truffle Butter and Sourdough 17:58 Booze, Band and Love Dress by Sandra Shepherd Originals (https://www.facebook.com/sas.originals/) Makeup by Minni Karamfiles on Instagram: @makeupartistrybyminni Flower crowns by Zoe Palmer on Instagram @farmhouseflowerswa Video footage by Clint Jasper on Instagram @clunts Venue: Donnelly River Village (www.donnellyriver.com.au) Support us and gain early access to videos and other exclusive rewards. This week, we're continuing the build of John Welsford's designed Pathfinder by installing the centerboard case using epoxy and West Systems glue powder. After that, I tackled the stem and forward frames, but not without hitting a snag! I discovered a mistake in the plans, but don’t worry—I came up with a simple workaround that keeps us on track. Plus, I dive into why cleaning up epoxy as you go is a game-changer for reducing mess, saving materials, and cutting down on sanding later. #boatbuilding #epoxy #diyboat Welsford boats Facebook page link: https://www.facebook.com/groups/JWDesigns Support us and gain early access to videos and other exclusive rewards.
