?? Banana Bread * Melt 1/3 cup unsalted butter * Mash in 3 overripe bananas * Stir in 1/2 cup sugar * Mix in 1 large egg * Stir in 1 tsp vanilla * Stir in a pinch of ?? * Stir in 1/2 tsp baking soda * Add in 1 1/2 cups AP flour * Add in 1 tsp ground cinnamon * Gently stir/fold in flour just until flour is incorporated (overmixing will make the bread dense) (I use a saucepan for everything so I can melt the butter in it first and avoid more washing more bowls and things) ?Crumble Topping * 1/3 cup flour * 1/4 cup flour sugar (half white half brown is????) * 1/2 tbsp cinnamon * 2 tbsp chopped pecans * 2 tbsp salted butter Add everything into a small bowl and use a fork to cut the butter into the flour mixture until crumbly Pour batter into loaf pan Sprinkle with streusel topping Bake at 375F for 45-50 mins until inserted toothpick comes out clean Transfer to a wire rack to cool ?????????

This unit runs on both 12v and 110v. It's stayed fairly cool even with 4 days of no power ( I lost my solar panel controllers early on and so my plan of running it 12v 6 hours a day changed.
