Locally known as Kina, they are a type of sea urchin, and they can be eaten raw as soon as your harvest them. Some folks like them on toast, and some just like to slurp them straight from the shell. It doesn't happen on every cruise. We don't plan for it. The dolphins don't keep to a schedule.
